Classic Confetti Squares

I have to be honest... I never enjoyed this dessert as a child. Once I reached my teens and took over tending to the Christmas meal preparations this dessert was quickly omitted. Now years later by the request of my daughters and husband (mostly husband) I pulled out my moms old recipe and gave it a shot.   I find the flavours more enjoyable now as a adult, but still not anywhere near the top of my treat list. My family loved it. It will be changed a bit next time. As you can see this mix made a bit more peanut butter mix that I would have prefered. So I would cut back on the amount of peanut butter or increase to maybe 1 and a half bags of marshmallows.

1 package butterscotch chips 

1 1/2 cup smooth peanut butter  

1/2 cup softened butter  

1 package coloured mini marshmallows

Melt butterscotch, butter, and peanut butter on low heat until smooth and creamy. Do not rush it or your mix will get dry and lumpy.  

Remove from heat and allow to cool 5 min.  

Add marshmallows and mix until combined and all marshmallows are coated.  

Pour mixture into a 8x8 pan lined with parchment paper.  

Refridgerate for 2 hours.  

Remove from pan and pull off the parchment paper. Cut into desired sized pieces. 

Serve or store in containers in freezer until needed.

If your our house is anything like mine clean up will be a breeze! I hardly had the pan in the fridge before my husband was liking the pot clean!
