This is the greatest guilty pleasure breakfast for me during the holidays. Pan fried with a bit of butter and a dark cup of coffee... Mmm.
This is super simple and great for drop in entertaining or for hostess gifts. It takes barely 5 mins to whip up and bakes in 35 min.
2 1/2 cups flour
2 tsp. baking powder
1/2 tsp salt
1 tsp nutmeg
1 tsp ground cinnamon
3/4 cup butter melted
2 large eggs
3/4 cup white sugar
1 tsp vanilla extract
1 cup eggnog
1 shot Rum (or 1 1/2... but no more then 2)
preheat oven to 350 degrees
grease 3 mini loaf pans
Combine flour, baking powder, salt, nutmeg and cinnamon in a large bowl. Set aside.
In mixer combine butter, eggs, sugar, vanilla, eggnog, and rum. Combine until smooth.
Add flour mixture to wet ingredients and mix until just combined.
pour into prepared pans.
Bake for 40-35 mins.
Remove and cool on wire racks for 5 min.
Remove from baking pans and let rest on wire rack until fully cooled.
These freeze beautifully for holiday stock ups!
