Easter Treats

Here comes Peter Cotton Tail....

If you have little ones at home or a very active sweet tooth then Easter is a great time of year. Chalk full of sweets and treats. Here are a few of my favourite Easter baking items. Each is simple easy and loved by all.

Bunny Fluff

4-5 cups popped popcorn

2 tbsp. butter

4 cups mini marshmallows

1/2 bag mini pretzels broken into bit size pieces

1/2 large bag Cadbury eggs

Multi coloured sprinkles


Mix popcorn, Cadbury eggs, and broken pretzel pieces together in a large bowl. Melt butter and marshmallows together in medium saucepan over med-low heat. Pour melted mixture over popcorn mix. Spread out on baking sheet and top with sprinkles. Break into chunks and serve.

Easter Best Brownies

1 package of your favourite Brownie mix

1/4 bag mini marshmallows

1/4 bag chocolate chips

1/4 large bag Cadbury eggs

multi coloured decorating icing


Prepare brownies as per package dirrections. Top with marshmallows, chocolate chips, and cadury eggs, decorate with loosely drizzled multi cloured icing.


Shortbread Cookie Cake

3/4 cup softened unsalted butter

3/4 cup white sugar

1 large egg

1 tbsp vanilla extract

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cream of tartar

2 cups all purpose flour

1 cup lightly chopped cadbury eggs, or pastel M&M's

Preheat oven to 350. Spray a 9 inch round cake pan with non stick sray

Mix butter and sugar in mixer until smooth and creamy, add in egg, vanilla, baking soda, salt, cream of tatar. Gradually add flour until comdnined and mix in chocolate eggs/candies with wooden sponn. Pour into cake pan and press evenly.

Bake for 20-25 min.

Remove from oven, cool and enjpy


*Note serve cut into wedges with some ice cream of a dollop of whipped cream.
