Last week I had a evening meeting to attend. It being a whined up before summer holidays I thought why not bring along a little something to nibble on! This is recipe is so simple and very easy to modify to your tastes, I normally use for breakfasts or lunch box desserts. My children adore these filled with almond butter and apricot jam.
The combinations of flavours and ingredients can range from whatever leftover jam you have in the fridge mixed chocolate chips or can be made into something rich and decadent using fresh cheese, nuts, fruits, etc. You could even throw in savoury items to make a easy brunch or romantic picnic roll.
2 Rolls Pillsbury or any prepared crescent roll
1 Bag semi sweet chocolate chips
1 Jar of raspberry jam
2 Tbsp. butter
Lightly grease 2 cookie sheets and set aside. I like to use a little shorting for this or a canned non stick spray.
Pre heat oven to 350 degrees or recommended heat per the can of crescent roll mix you are using.
Roll out each can of dough on a cutting board and separate triangles.
Liberally spread jam over each piece, sprinkle with as much chocolate chips as you like and roll as usual.
Place rolls on cookie sheets and back for 12 min or per instructions on your crescent roll mix.
Remove from oven and cool for 5 min before removing rolls to a wire rack.
Meanwhile melt butter and more of the chocolate chips in a small sauce pan (or you can do this in the microwave) being careful not to burn your chocolate. Drizzle melted chocolate over cooled crescents and allow to set. (about 5-10 mins)
I also whipped up a batch of these with a lemon cream cheese filling.
1 8 oz Package of creamcheese
1/2 tsp Lemon extract
Zest of 1 lemon
2 tbsp. Sugar
Cream everything in your blender and fill and bake as per directions above. I used a simple white royal icing that I had on hand to decorate.
