Sweet and Warm Tomato Jam

This jam is a late early fall must! It has a lively sweetness from the tomatoes, not at all like a tomato sauce. The addition of warm spices give it a chutney flavour that is beautiful when used for sandwiches.

Incredibly simple to make, this has no chopping required just toss it all in the pot and cook it down. It does reduce a lot like most jams so your end product is condensed but packs a huge flavour punch.

4 pounds cleaned cherry tomatoes  

2 cups white sugar

Juice of 1 lemon  

1 tablespoon ground ginger

1 tablespoon hot curry powder

1 teaspoon salt  

1 teaspoon ground cinnamon 

1/2 teaspoon cumin

Combine tomatoes, sugar, lemon juice, salt, and spices in a large pot. Bring to boil over medium-high heat. Stir frequently. Reduce heat to simmer and cook until reduced and thickened. About 2 and a half hours. Remove from heat to cool and package for storage.
