Somewhere under the rainbow.... Made of jello is a cloud of fluffy whipped cream. Having young children gives the privilege of making fun and whimsical treats. St Patrick's day is one of the easier times to do this in terms of having less to balance on your plate then other holidays. Most years it is removed enough from Valentines and Easter that it creates breathing room to do a little something extra and fun without too much bustle or stress.
1 Package each purple, blue, green, yellow, and orange jello. 2 packages red jello.
1 container plain, vanilla, or lemon yogurt
Non Stick spray
Prepare bundt pan with non stick spray
Add 1 1/4 cups hot water to each jello mixture and stir until dissolved. For the red add 2 1/2 cups as you will be using 2 packages of jello mix.
Pour 3/4 cup of the purple mixture into your prepared bundt pan. Allow too set in fridge for 15 min.
Add 1 1/4 tablespoon yogurt to remaining purple mixture and risk until smooth. Refridgerate alongside your bundt pain for 15 min.
Wait 15 min then gently press jello in bundt pan to insure its set enough to add "milky" half of the purple mixture. It should hold but leave a bit of a finger indent. Evenly add mixture into bundt pain one spoonful at a time evenly. Do not pour it in, it will break the layer.
Repeat this process with each colour. Cover with plastic wrap.
Allow mold to set overnight.
Carefully remove from pan. Serve sliced with whipped cream "clouds".
