Who doesn't love banana bread? It's classic, easy, and comforting. This recipe prepares 2 loaves for so you can enjoy one immediately and freeze the other for later snacking.
- 8 bananas chopped and smashed (use older bananas that are going soft)
- 1 ½ cups sugar
- ½ cup unsalted butter, melted
- 2 teaspoons pure vanilla extract
- 2 large eggs (room temp.)
- 3 cups all-purpose flour
- 1 ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup chopped walnuts
- 1 cup chocolate chips
Preheat the oven to 350°F
Prepare two 9×5-inch bread pans with cooking spray and spray.
In a electric mixer bowl, mash the bananas with a fork.
Add sugar, melted butter and vanilla extract, and mix until combined
Add flour, baking soda and salt. Mix to combine.
Add walnuts and chocolate chips.
Divide the batter evenly into the prepared pans.
Bake for 60 minutes.
Cool completely before serving.
Make sure you've got some milk or decedent iced coffee to go with this one!
