This is more then a jam. It's almost a food group all on its own! Perfect hot or cold. Simple on a cracker, or as a topping on burgers. I just recently filled some mini tartes with some and added a touch of honey goat cheese. So tasty!
1 lb good-quality bacon
1 small onion, chopped
3 garlic cloves, chopped
1/2 cup packed brown sugar
1/2 cup brewed coffee
1/4 cup maple syrup (real)
1 Tbsp. black berry balsamic vinegar
1 Tbsp. grainy mustard
Thinly chop bacon and cook it in a heavy skillet over med-low.
Trransfer to a paper towel lined plate using a slotted spoon.
Sauté the onion and garlic cloves in the remaining bacon fat for 5 minutes, or until soft and golden.
Return the bacon to the pan, add the brown sugar, coffee, maple syrup, vinegar and mustard and cook over medium-low heat for half an hour. This should give you a thick Jan like consistence.
This can be jarred and makes a great simple gift or enclosed in a large basket of goodies. I honestly don't know how long it keeps. I have never made a batch that isn't gone within the day! The husband just can't control himself when it comed to bacon.
