Soft, comforting and the best way to use up bananas in a hurry! I don't normally have extra bananas around going brown, but we received a lovely fruit basket this week and I found myself in a dire need of a banana liquidation!
- 1 1/2 cups all purpose flour
- 1/3 cup granulated sugar
- 1 Tbsp molasses
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large bananas, mashed
- 1 large egg
- 1 tablespoon vanilla
- 1/2 cup butter, melted
- 1/4 cup milk
- 1 cup chocolate chips
Preheat oven to 350F.
Line muffin tins with 12 muffin liners.
Mash banana's with a fork and cream in electric mixer with egg, vanilla, melted butter, and milk.
Stir in flour, sugar, molasses, baking powder, and salt until just combined.
Stir in chocolate chips.
Spoom batter into muffin cups, filling each about 3/4 full. Bake 25-30 minutes, until light gold.
Transfer to cooling racks immediately.
* Of course chopped walnuts make a great addition to these if you don't need to worry about allergies.
The best thing about these muffins is because they have fruit in them my kids consider them a good choice for breakfast! I somewhat disagree lol!
